Eggcelent snack


Stumbled upon this lovely recipe on a Facebook group page. Utterly simple. Crack an egg into a little cup that is oven proof. .don’t let the yolk break. sprinkle a cup of fresh chopped spinach. Add a pinch of salt, dried herbs, pepper powder and drizzle with half a teaspoon of olive oil. Bake in a preheated oven for about ten minutes. Amazingly healthy. . Smell-free and yummy too. Please try! !

Er. I don’t know but worth a shot. .the advantage worth an oven is that the spinach was cooked and crisp. .not mushy. .am not sure if we will get same effect from streaming. .

It’s no good you taking the short cuts in cooking, Indian house wife is not allowed to do this, I am sure the minimum requirement for Indian wife is three course meal, and the hubby will agree with me on that one. And also don’t forget the freshly made chapatti with ghee on top YUM YUM. I think it’s time I spoke to your mister. ๐Ÿ™‚


BTW I’m thinking about sending you a book written by my fav writer who dispenses good advise to all Indian house wife, on how to be a better house wife. wink wink ๐Ÿ™‚

This is yum. We have something similar almost every other weekend since I saw Rachel Khoo cook oeufs en cocotte in BBC1 .. I think that one adds creme fraiche at the bottom first, but I just improvise with whatever in fridge – add herbs, spices (for me) and tastes delish everytime.
